Directions

  1. Preheat oven to 325 degrees and boil a large pot of salted water.
  2. Cut tops off peppers (stem end) and clean seeds out. Slice a sliver off the bottom of each pepper so they will stand up straight.
  3. Parboil the peppers for about 10 minutes, Remove from boiling water and set upside down on paper towels to drain and cool.
  4. In a medium skillet brown ground beef with onions and drain off the fat.
  5. Add canned tomatoes and cooked rice to the beef mixture. Mix well. Season with salt & pepper to taste. Stuff the peppers with this mixture.
  6. Place peppers standing up in a large pan or Dutch oven. Pour tomato sauce over the peppers and pour about an inch of tomato juice around them in the bottom of the pan.
  7. Cover and bake in the oven for about 45 minutes or until peppers are fork tender, keeping an eye on the liquid level in the pan so it doesn't boil away. Add water or more tomato juice as needed.
  8. Use the juice from the pan at the table to pour over peppers.
