Pork Back Ribs, Oven-Baked or Instant Pot

Directions

1 hour up to 1 day ahead:

  1. Remove membrane from the back of the ribs. Video
  2. Cover both sides of the ribs heavily with your dry rub. Wrap in heavy duty foil and put in the refrigerator until time to cook them.

Oven directions (skip if using the Instant Pot)

  1. Preheat oven to 275 degrees.
  2. Place ribs on a rack on a shallow baking pan with sides that is covered in foil. (You can use the same foil you wrapped the ribs in if it's big enough.) Put the ribs bone side down.
  3. Pour the cup of apple cider vinegar into the pan under the ribs. This will keep the ribs moist and help tenderize them. It should not be touching the ribs.
  4. Bake 4 hours then cover the top of the ribs with your favorite BBQ sauce. Put back in the oven for 30 minutes. (Different size ribs will cook in different amounts of time. This recipe worked for a 3.5-pound slab. Adjust your time according to the size of your ribs. They are done when you can wiggle the bone and it feels loose inside the meat.)

Instant Pot Directions

  1. Cut ribs into 3 bone sections.
  2. Place rack inside Instant pot. For a 6-quart Instant Pot, add 1 cup of cold water. For an 8-quart Instant Pot, add 1 1/2 cups of cold water.
  3. Stand rib sections up on the rack around the pot, leaning against the side of the pot.
  4. Close and lock the lid. Be sure the steam valve is closed.
  5. Press the Meat button and set the time to 40 minutes.
  6. While it's cooking, set up a cookie sheet, preferably with sides, with a rack. Spray with non-stick cooking spray. Move your top oven rack to the 2nd position.
  7. When the 40 minutes are finished, release the steam and open the pot.
  8. Using tongs, carefully remove the meat sections. They will fall apart! Try to keep them intact and lay them face down on the rack/cookie sheet set-up.
  9. Brush the bottom side generously with your favorite BBQ sauce and place the pan under the broiler. Leave the door open slightly and watch it. When the sauce begins to bubble, remove it from the oven.
  10. Turn each piece over and sauce the top. Return it to the oven and broil until these bubble on top. Remove from oven and serve!
