Old-Fashioned Baked Custard

Directions

  1. Fill tea kettle with water and start to boil. When boiling, lower heat to keep water hot.
  2. Scald milk by placing it in a medium saucepan and heating over medium heat. DO NOT BOIL. Heat only until you can tilt the pan and see a rainbow when you look at the milk surface. Then it's ready. (180 degrees F.) Remove milk from heat and while cooling, beat the eggs in bowl with sugar and salt. Stir in milk and vanilla. Pour custard into baking dish or individual custard cups. Sprinkle with nutmeg.
  3. Bring water in teakettle to boil again if necessary by raising heat for a few minutes. When the water is boiling, place baking dish or cups in a large baking pan about 2 inches deep – a 9x13 pan is good for this. Pour boiling water into pan surrounding the custard containers.
  4. Place in oven and bake at 325 degrees for 45-55 minutes or until a knife inserted in center comes out clean. Serve warm or chilled.
  5. Note: For pie, pour custard into an unbaked [gf] pie crust, sprinkle liberally with nutmeg, and bake at 350 degrees or until knife inserted near center comes out clean. No need for water bath when baking pie.
